Mojo Chicken, Bean, and Vegetable Soup Recipe
This is a recipe for a spicy, Mojo Chicken, Bean and Vegetable Soup so chock full of delicious, healthy ingredients some might call it a stew, and so spicy and zesty that many will call for seconds! Best of all, this delicious soup is full of healthy, wholesome foods like low-fat chicken, vitamin-rich vegetables, and heart-healthy, fiber-rich beans.
The recipe features skinless chicken, several vegetables, a variety of beans, Mojo marinade, a wee bit of spicy peppers and a special secret ingredient finishing touch: orange juice!

Here is how to make this tasty soup:
Ingredients
1 can sweet corn
1 can sliced carrots
1 can French cut green beans
1 can navy beans
1 can black beans
1 can black-eyed peas
1 can red beans
1 small can baby lima beans
1 can diced tomatoes
1 can stewed tomatoes
1 eight ounce can tomato sauce
1 medium onion, diced
8 cabbage leaves, cut into bite-sized pieces
2 celery stalks, diced
1 large baked potato with skin, cut into bite-sized pieces
4 skinless chicken thighs
3 1/2 cups of bottled or filtered water (do not use unfiltered tap water)
1/2 cup orange juice
Mojo Criollo marinade
all of the mojo chicken juice, fat & drippings left from cooking the chicken
3/4 teaspoon each of salt, black pepper, crushed red pepper, & garlic powder
Mojo Chicken Preparation
Remove skin from chicken thighs. Place thighs in a microwaveable covered dish and add Mojo Criollo marinade to just cover chicken. Place lid on dish and microwave on high for ten minutes. Let stand covered for an additional five minutes. Allow chicken to cool. Save Mojo Chicken juice, fat and drippings in the dish to add to the soup. Cut chicken into bite-sized pieces.
Soup Preparation
After the Mojo Chicken is cooked, cooled, and cut into pieces, combine all ingredients except orange juice in tall soup pot and stir well. Bring to a slow boil and reduce heat to low. Simmer on low for 30 minutes, or until cabbage and celery pieces are tender. Add orange juice and simmer on low for an additional five minutes.

You are welcome, Lady_E. If you don't find the Mojo marinade in your market, or in a local Spanish market, you could make your own using the recipes linked above. Most who make their own Mojo use sour oranges but you may be able to substitute limes for the sour oranges. Thanks for commenting!
Mmm...mm...mmm good! I can smell it cooking right now! Yummy and thanks for the recipe, I plan on cooking this one up in a big slow cooker and serving it this Fall when football season starts! I rated this up!

Thanks for a mouth watering Recipe. I'm not sure I can get my hands on Mojo Criollo. Seems like an American product. Anyway, will find alternative. Thanks.
